If you have a summer garden, chances are good that you are swimming in cucumbers right now. Cucumbers are juicy and healthy, but you can only eat a fresh raw cucumber or taste cucumber in a salad so many times before it gets old. To mix things up, try a few different recipes that will help you use your cucumbers in more imaginative ways.
Make Tzatziki Sauce
Tzatziki sauce is easy to make, just grate some cucumber into plain Greek yogurt and add minced onion, salt, and pepper. Once prepared, refrigerate the sauce for at least a half hour to allow the flavors to mingle. After it’s done, tzatziki sauce is great on wraps, Gyros, pitas, and as a dip for veggies, croquets, and many other snacks. This versatile sauce can replace more unhealthy sauces like mayonnaise, adding a bit of nutrition and cutting down on the calories and fat.
